The owner, founder, and head chef of one of Cardiff ’s newest independent restaurants, Gethin Rees, has taken the next big step in a career driven by a longstanding passion for cooking to open Seren Diemwnt. Meaning diamond star, the dining destination places emphasis on simply serving great food for everyone to enjoy; inclusivity and accessibility are important to Gethin and his small team. They are all committed to providing each guest with the best experience possible, and this family feel – where the seven members of staff all have input – along with support from his partner and family has helped Gethin to create a welcoming yet sophisticated restaurant for the Llandaff community and beyond as its reputation grows. The ambitious chef is Cardiff born and bred, so taking the leap of faith to start his own business in his home city made the achievement even more special. His aim was always to open his own venue by the age of 32; Gethin’s 32nd birthday in March 2018 came five months after Seren Diemwnt served its first customers, so safe to say he can tick that off the bucket list! He has enjoyed having the freedom to develop his own recipes, tweaking the ideas that might come from dining out elsewhere or inspiration from the seasonal produce around him to get the balance just right. The menu is an à la carte offering heading towards the fine dining end of the spectrum, but for Gethin that level of quality shouldn’t mean the food becomes vastly expensive and therefore exclusive. He also ensures that there are plenty of vegetarian options, and around 80% of the menu is gluten free. His aim is to make Seren Diemwnt a great place to eat out for everyone, not just on the rare occasion it’s affordable but for any celebration or evening out. A lot of work went into making the interior contemporary and stylish during renovations of the venue, which now features soft lighting and candles on the tables to create a really special atmosphere. Gethin’s vision for the future focuses on first establishing Seren Diemwnt as a part of the Llandaff high street community, which will stem from the friendly welcome his team always offer customers – recognised when they return and made to feel really at home when they visit for the first time – and the care the restaurant puts into each aspect of its unique dining experience.
